Oatmeal Scotchies Cookies!

It's been awhile since we've put up some food and I thought it'd be the perfect time to share one of my new favorite cookie recipes. I was looking up recipes that didn't have any chocolate involved and came across these wonderful little treats. They're really simple and quite delicious but enough talk lets get down to it! 

Here's everything you'll need:
1 1/4 cups unsalted butter at room temperature
3/4 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 cups quick-cooking rolled oats
1 cup butterscotch chips

1. Before you get down to anything you'll need to preheat your oven to 375 degrees F.
 2. Next we'll be mixing the butter, brown sugar, white sugar, egg, and vanilla extract in a bowl until well combined. Then beat in flour, baking soda, salt, cinnamon, nutmeg,  and the rolled oats.  After you've combined everything thoroughly all that's left is to add the butterscotch chips. (You can always  substitute the butterscotch chips with chocolate chips or peanut butter chips, whatever you like!)
Here's the mix!
3. Next step is to spoon out tablespoon portions of dough onto non-stick cookie racks about 2 inches apart from each other.
They're just so good Madison tried to eat them right out of the bowl!
A good tablespoon size portion for each cookie is good.
4. All that is left is stick the racks in your preheated oven and let them bake from 8-10 minutes. If you like them a little softer you should remove them around 8 and if you like them a little crispier leave them in for the full 10. After they're done baking, pull them out and let them cool on some cooling racks for about 10-15 minutes then enjoy!
